Course overview

Do you want a career cooking on yachts? Our 5 day Superyacht Cookery Foundation teaches a repertoire of delicious meals to impress, and will improve your confidence and enjoyment when catering for guest and crew. With instruction from expert chefs and professional yacht crew, the programme gives you a thorough understanding of good food preparation and cookery practice, including menu planning and budgeting.

  • Sundowners
  • Canapés and Sushi
  • Food provisioning and shopping
  • Working on yachts and superyachts
  • Menu planning and cooking to a budget
  • Stowage/packing hazards/international regulations
  • Quality points for purchasing fresh meat and seafood
  • Understanding the benefits of using local fresh produce
  • Understand different dietary requirements, allergies and intolerance
  • Daily demonstrations, practical hands-on cooking and tasting sessions
  • Learn how to prepare and make a selection of bread, soups, sauces, hors d’oeuvres, main course dishes and delicious desserts
  • Learn how to prepare a range of fresh fish, crab and shellfish dishes
  • Eggs benedict – cook your own breakfast
